Lemon Veggie Gnocchi

With so many creative club members, we like to feature at least one Club Member Idea every month to showcase at-home DIY projects and creative solutions. This month, Club Member Natasha H. from Ellington, CT shared with us her delicious recipe for Lemon Veggie Gnocchi. Here's what she said:

"I used the Gnocchi you carry in the store to make the following recipe for Meatless Monday. The recipe serves two easily, with a little leftover for lunch the following day."

Easy Step-by-Step Directions:

  1. Boil gnocchi in lightly salted water until they float to the top of the pot. 
  2. While gnocchi is boiling, saute mushrooms in coconut oil until they are lightly golden brown. Add green beans and two tablespoons of water and cook until al dente. Remove from the pan and set aside.
  3. Drain the gnocchi, then add gnocchi to the pan with coconut oil or butter (your preference) and saute until light brown around the edges.
  4. Return the veggies to the same pan. Add garlic, salt, black pepper, red pepper flakes, and lemon zest, then finish off with lemon juice.
  5. Grate parmigiano cheese over dish and serve hot.
