  • 2 Boneless Skinless Chicken Breasts, Roasted and Diced
  • 1 Cup Seedless Red Grapes, Cut in Halves
  • 1 Cup Salted Cashews
  • 1 Small Apple, Finely Diced
  • ¼ Cup Finely Chopped Red Onion
  • ¼ Cup Finely Chopped Green Onions
  • ½ Cup Raisins
  • 1 Cup Plain Greek Yogurt
  • 1 Teaspoon Chopped Fresh Dill
  • Salt and Pepper to Taste
  • Baking Dish
  • Knife
  • Large Mixing Bowl

Easy Step-by-Step Directions:

  1. Gather and dice all fresh ingredients (see image #1).
  2. Preheat oven to 325°. Roast chicken breasts in a baking dish for 40 minutes or until done. Allow the chicken breasts to cool fully, then dice.
  3. In a large mixing bowl, stir together all ingredients until well mixed (see image #2), adding salt and pepper to taste (see image #3).
  4. Refrigerate for at least 4 hours before serving.
  5. Serve on top of a bed of mixed greens, in a pita pocket, or as a sandwich between two slices of bread!
