Potato Salad


The spring and summer picnic and cookout seasons have arrived, and neither one is complete without a homemade potato salad! This cool and creamy side dish can be prepared ahead of time so you won’t have any last minute cooking before party time! With just a handful of ingredients and minimal steps, whipping up this recipe is a breeze.

Shop at Dollar Tree – Here’s What You’ll Need:

  • 20 Small Red Potatoes
  • 3 Hard Boiled Eggs
  • 1 Cup Chopped Celery
  • ½ Cup Chopped Onion
  • ½ Teaspoon Salt
  • ½ Teaspoon Black Pepper
  • ½ Teaspoon Paprika
  • 1/3 Cup Mayonnaise
  • 1 Tablespoon Yellow (or Dijon) Mustard
  • 2 Pots (1 Large; 1 Small)
  • Sharp Knife
  • Large Bowl

Easy Step-by-Step Directions

  1. Gather all ingredients (see image #1), then place washed potatoes in a large pot with salted water and bring to a boil. Cook until potatoes are tender but still firm (about 12 minutes). Drain, cool, and cube potatoes.
  2. Place eggs in a small pot and cover with cold water. Top with a lid, bring water to a boil, and then remove from heat. Let the eggs sit in hot water for about 12 minutes. Remove eggs from the water, then peel and chop.
  3. In a large bowl, mix together the eggs, potatoes, onion, celery, paprika, salt, pepper, mustard, and mayonnaise (see image #2).
  4. Cover the potato salad and refrigerate for at least 4 hours before serving. Garnish with additional paprika and leaves from the celery stalks.
