Rainbow Deviled Eggs

Colorful Easter eggs are not just for hiding and hunting. This unique twist on traditional deviled eggs will bring a pastel Easter pallet to your dinner table. A rainbow of colors make these deviled eggs eye catching, and they are as delicious as they look!

  • 10 Eggs
  • ½ Cup Mayonnaise
  • White Vinegar
  • Food Coloring
  • Clear Cups
  • 1 Tablespoon Yellow Mustard
  • 1 Tablespoon Relish
  • 1 Teaspoon Ground Pepper
  • Paprika
  • Mixing Bowl
  • Large Pot
  • Colander
  • Knife
  • Fork
  • Paper Towels

Step-by-Step Directions:

  1. Place the eggs in a large pot and cover with water.
  2. Bring the water to a boil, turn down the heat to low, cover and simmer for about 15 minutes.
  3. Remove the eggs from heat and drain in a colander. Run cold water over the eggs.
  4. Once cool, carefully peel each egg.
  5. Slice the eggs in half lengthwise and place the yolks in a mixing bowl. Set the bowl aside.
  6. In individual clear cups, place drops of food coloring into a mixture of equal parts water and white vinegar. Use a separate cup for each color (see image below).
  7. Place the cooked egg whites to the coloring mixture and keep an eye on them. Remove them from the coloring mixture when they have reached the desired shade. Place the egg whites on a paper towel to dry.
  8. Mash the egg yolks with a fork. Add mayonnaise, yellow mustard, relish, and ground pepper, and stir until creamy.
  9. Evenly disperse heaping teaspoons of yolk mixture into the colored eggs, sprinkle with paprika, and serve on a festive Easter dish!
