Strawberry Crumb Bars

Fresh fruit is in its prime season during the summer, and our Strawberry Crumb Bars are the perfect way to showcase these sweet berries! Strawberry filling layered between a crumbly butter crust creates a melt-in-your-mouth dessert for all your summer parties. Yum!

  • ½ Cup White Sugar
  • ½ Teaspoon Baking Powder
  • 1½ Cups All-Purpose Flour
  • ¼ Teaspoon Salt
  • ½ Cup Butter
  • 1 Egg
  • 1 Teaspoon Vanilla
  • 2 Cups Strawberries, Chopped
  • 1/3 Cup White Sugar
  • 2 Teaspoons Cornstarch
  • Non-Stick Cooking Spray
  • 8x8" Baking Pan
  • 2 Medium Bowls
  • Small Bowl
  • Mixing Spoon
  • Fork
  • 2 Knives

Easy Step-by-Step Directions:

  1. Preheat the oven to 375º. Grease the baking pan with non-stick spray (or a combination of butter and flour).
  2. Chop the strawberries and set aside. Note: If you are using frozen strawberries, follow the package directions to thaw them first.
  3. In a medium bowl, stir together ½ cup of white sugar, flour, baking powder, and salt.
  4. Using two knives, cut the butter into the flour mixture until the pieces become pea-sized (see image #1). The dough will be crumbly (see image #2).
  5. In a separate small bowl, beat an egg with a fork, and then add the egg and vanilla to the flour mixture.
  6. Press half of the dough into the bottom of the pan (see image #3).
  7. In another medium bowl, mix together 1/3 cup of white sugar, cornstarch, and strawberries. Spoon this mixture evenly over the bottom crust (see image #4).
  8. Crumble the remaining dough over the strawberry layer (see image #5).
  9. Bake at 375º for 45 minutes or until golden brown.
  10. Cool completely, then refrigerate in an airtight for at least four hours. Cut into bars and serve fresh!
