Granola Trail Muffins


Make it easy for your household to hit the trail — whether it’s back to school or in to the office! Fuel the entire family with a healthy, hearty breakfast. Whip up a double batch of these muffins for the first week of school and freeze some for later. (They also make a great mid-morning pick-me-up!) Recipe makes 1 dozen.

Shop at Dollar Tree – Here’s What You’ll Need:

  • 1 – 7-oz. Pkg. (about 2 cups) Granola with Raisins
  • 1½ Cups All Purpose Flour
  • 2 Teaspoons Baking Powder
  • ½ Teaspoon Baking Soda
  • ¼ Teaspoon Salt
  • 1 Teaspoon Cinnamon
  • ½ Cup Packed Brown Sugar
  • 3 Medium Eggs
  • 1 Cup Milk
  • 1 Tablespoon White Vinegar
  • 1 Teaspoon Vanilla
  • 1 – 4-oz. Package (about 1 Cup) Tropical Trail Mix
  • 2 Mixing Bowls
  • Muffin Tins
  • Whisk
  • Spoon
  • Nonstick Cooking Spray
  • Toothpick

Easy Step-by-Step Directions:

  1. Preheat oven to 350° and grease 12 muffin tins.
  2. In a large bowl, combine granola, flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, whisk together sugar, eggs, milk, vinegar, and vanilla.
  4. Slowly stir wet mixture into the dry until just blended. It’s okay if the batter is a little lumpy, but make sure it’s evenly moist.
  5. Fold in trail mix with a spoon.
  6. Divide evenly into 12 greased muffin cups. Bake at 350° for 15 minutes or until golden brown, and a toothpick inserted in the center comes out clean.
  7. Cool 5 minutes before removing from tins. Serve warm or allow muffins to cool completely and then freeze.
