Pumpkin Cream Cheese Muffins

One of our favorite fall flavor is pumpkin...especially in delicious desserts! Accompanied with spices and cream cheese, our Pumpkin Cream Cheese Muffins are a decadent and warm treat. Enjoy a tasty muffin with a hot cup of coffee or tea and you’ll be fueled for any fall day!

Shop at Dollar Tree – Here’s What You’ll Need:

  • 3 Cups All-Purpose Flour
  • 1 Teaspoon Cinnamon
  • 1 Teaspoon Nutmeg
  • 1 Teaspoon Ground Cloves
  • 4 Teaspoons Pumpkin Pie Spice
  • 1 Teaspoon Salt
  • 1 Teaspoon Baking Soda
  • 5 Eggs
  • 2 Cups + 3 Tablespoons Sugar
  • 2 Cups Pumpkin
  • 1¼ Cups Vegetable Oil
  • 8-oz. Cream Cheese
  • ¼ Cup Chopped Walnuts or Pecans (Optional)
  • Muffin Tins
  • Paper Liners
  • Wax or Parchment Paper
  • Knife
  • Toothpick
  • Cooling Racks

Easy Step-by-Step Directions:

  1. Preheat oven to 350º and line muffin tins with paper liners.
  2. Mix cream cheese with one egg and three tablespoons of sugar (see image #1). Place the mixture on a piece of wax or parchment paper and roll it into a long log (see image #2).
  3. Place the cream cheese form in the freezer for one hour, while you prepare the muffins.               
  4. Mix all spices, salt, baking soda, eggs, sugar, pumpkin, and oil until well incorporated (see images #3 and #4).
  5. Fill paper liners halfway with batter.
  6. Unwrap the cream cheese mixture and cut into 1" pieces, each about one tablespoon (see image #5).
  7. Press one cream cheese piece into the center of each muffin (see image #6) and sprinkle each muffin with nuts (optional).
  8. Bake for 20-25 minutes, or until a toothpick inserted into a muffin is free of batter.
  9. Let the muffins cool in pans for five minutes and place onto racks to cool completely. Enjoy fresh and store at room temperature for best taste.
