Crust:

  • 1-1/3 Cup Graham Cracker Crumbs
  • 2 Tablespoons Granulated Sugar
  • ¼ Teaspoon Ground Cinnamon
  • 6 Tablespoons Melted Butter

Filling:

  • 2 – 8-oz. Packs of Cream Cheese, Softened
  • 2/3 Cup Granulated Sugar
  • 2 Eggs
  • ¼ Cup Sour Cream
  • 1 Teaspoon Vanilla Extract
  • 2 Honey Crisp Apples, Peeled, Cored, and Diced
  • 2 Teaspoon Lemon Juice

Streusel:

  • ½ Cup All-Purpose Flour
  • ¼ Cup Quick Oats
  • ¼ Cup Packed Brown Sugar
  • ¼ Teaspoon Ground Cinnamon
  • 1/8 Teaspoon Ground Nutmeg
  • 1/8 Teaspoon Salt
  • ¼ Cup Unsalted Butter, Cold and Diced into ½" Cubes

Easy Step-by-Step Directions:

  1. Preheat the oven to 325°. Line 18 muffin tins with muffin cups.
  2. Combine graham cracker crumbs, sugar, and cinnamon. Mix in the melted butter to make the crust (see image #1).
  3. Divide the crust into lined muffin cups and press into an even layer (see image #2).
  4. Bake for five minutes and allow the crust to cool completely.
  5. Mix all streusel ingredients together in a small bowl using your fingers to in cooperate the butter (see image #3). Set in the refrigerator while preparing filling.
  6. Toss diced apples with lemon juice and set aside.
  7. In a large mixing bowl, using an electric mixer, cream together the cream cheese, sugar, eggs, vanilla, and sour cream.
  8. Assemble cheesecakes by filling each cup ½-full with cream cheese filling (see image #4), then ¾-full with apples (see image #5), and topping the cup off with streusel (see image #6).
  9. Bake for 25 minutes, cool at room temperature for 30 minutes, then refrigerate for three hours before serving.
